The influence of this book which transformed Australian eating in the 1960s cannot be overestimated. Remarkable book for its (what we'd call now) multi-cultural authenticity in the face of White Australia. Lately it's been revised, but it scarcely needs it.

The recipes in this book have been gathered over many years by Margaret Fulton during her travels - through friends and acquaintances who have shared their esting experiences with her, and through the co-operation of some of the world's finest chefs.
Restaurants often change hands and individual dishes come and go on menus, so specific place names are not always included with the recipes. However, all the dishes are representative of those you can look forward to in restaurants in the country or area mentioned.

This is the most unassuming but most heavily used of all my cookbooks. I turn to this for all my basic recipes and one of two of the more adventurous ones. It's very Australian - straightforward and uncomplicated.
