The forgotten beginnings of creation and Christianity par Carl Anders Skriver
This is the first book I ran across which put forward the thesis that Jesus was a vegetarian. Skriver was a minister of the Evangelical Lutheran church in Germany for 25 years. It is well thought out, and Skriver has read a bunch of scholarly literature in German that isn't readily available in English, or isn't available at all in English.
