Margot Lasher relays animal stories in her own life as well as friends and acquaintences((The author also wrote "The art and practice of compassion and empathy" which is one of my very, very favorite non-fiction books.)).

Margot Lasher eloquently describes the magical human process of empathy. The book is out of print, but can be purchased as a used book through Amazon (and others I suspect). She also wrote "And the animals will teach you"...which is a related area whereby animals can communicate empathetically with humans.
