The entire book is a series of letters from one character to another. A professor from the US exchanges emails with a professor from the UK. The professors and their spouses meet each other and then the emails start flowing between all of them and somewhere towards the end of the book, each couple splits up. The UK professor ends up with the US professor's spouse and vice-versa. A very funny book that I read in the 90s. I think the cover page had the two male professors staring past each other with a picture of an airplane on top of their heads.

Although it's not entirely epistolary, that has to be Changing places : a tale of two campuses, by David Lodge. There are sequels, too: Small world : an academic romance and Nice work
