This informational book can be used to help students understand Celiac Disease, allergies, food intolerances, etc. "Eating Gluten-Free With Emily" tells the story of a young girl named Emily who is diagnosed with celiac disease. Celiac disease means her body is unable to process gluten in the same way others can. Emily has a special diet that consist of eating foods that don't contain gluten, and some special foods that are marked gluten-free. This book is great for any child with celiac disease, as it breaks the information down in easy to understand terms.
