It includes many delicious one-pot meals that can be cooked in minutes. Favorites include Armenian Red Lentil Soup with Apricots (cooks up like split pea soup); New Mexican Pinto Bean Soup; Curried Split Pea Soup; Quinoa Vegetable Soup (I increased dried split peas to 1 cup); Cauliflower-Potato Curry; Brown Rice with Spinach, Raisins, and Pine Nuts; Thai Chickpeas; and Warm White Bean Vinaigrette.
The books contains detailed instructions/cooking time for cooking grains, brown rice, and beans. As we head into winter, I'll be using this book frequently to prepare delicious soups and quickly cook up batches of beans. ( )
