I thoroughly enjoyed this book, and it will not be a cookbook that is never opened! The recipe "Walnut Hummus" is a delicious spin on the typical Hummus I make. I also realized after reading this book that I had all the ingredients to make "Simply Lima Beans". Many of these recipes require no extra food purchases, just what staples are in the house. The only problem I had with this book was the description of how to determine how much fiber you need. It said to divide two numbers, but I looked at the example, it multiplied it. I eventually figured it out. The theory here is that beans fill you up fast and have such a high water content, that you will lose weight. I am about 95% certain, I could not get my family to try any of the recipes, but it was interesting to see the different nutrient contents of the beans.
