Years ago, after college and some graduate study and before heading on to graduate study at Harvard, I ran a pizza and sandwich restaurant for a large corporate chain: Pizza Hut (HQd in Texas). I learned "hands on" (under corporate tutelage) lots of the insider "tools of the trade" and core skills (and "lore" - "Pizza has all four food groups, so it's great for dieting!").

Yeah! Yeah! That's long behind me, but public interest in pizza has surged with a vengeance, almost like cancer survivors in remission whose cancer has resurged with a vengeance, but I digress that that may not be a good metaphor.

I became vegan ages ago (after the "pizza experience") and can only note HOW OFTEN the issue of "vegan pizza" returns as vegetarian and vegan interest is growing worldwide.

My local vegan friends who OWN vegan pizzerias in Cambridge (Veggie Planet in Harvard Square) or Boston (Peace o' Pie) ought to read this. He's done exactly what I did in my most recent graduate thesis - he moved all the NON-core (but HIGHLY useful information) to appendices and kept his TOPIC in the center - >100 vegan pizza recipes PLUS discussions on dough, crust, sauces, and using grains, legumes, and vegetables in one's masterpiece presentations: "Voila! Vegan Pizza!"
