Ron Pickarski

When I used to cook in a vegan/macrobiotic deli, many of the chef's recipes were derived from those found in this classic of vegan cookery. Former Franciscan friar Ron Pickarski is a vegan superstar chef who now runs a company that produces healthy vegan/vegetarian fare for institutional food service operations. The recipes in this book are all amazing, but some favorites include the Bulgur Walnut Loaf and his chocolate cake recipe (including the chocolate icing).
