This is something I'm rather interested in, and wouldn't mind some recommendations of books.

Specifically, I'm rather interested in the mythology of Britain. However, the sources I've found seem to focus more on the various celtic gods/goddesses than on the realms of the faerie and the uses of "real" beasts in myth. Any good suggestions on the topic?

Observations on Popular Antiquities by John Brand
Keightley's Fairy Mythology by Thomas Keightley
English Folk-Rhymes - A Collection of Traditional Verses Relating to Places and Persons, Customs, Superstitions, Etc by G.F. Northall

these are all quite rare books, but may be available on Google books as downloads.

A lot of animal myths and superstitions can be traced back to medieval bestiaries. A good book on this is The bestiary: a book of beasts : being a translation from a Latin bestiary by Terence Hanbury White

You might also enjoy "Wild Men in the Middle Ages: A Study in Art, Sentiment, and Demonology" by Richard Bernheimer - but equally, not that easy to find

I'd recommend Maureen Duffy's The Erotic World of Faery and Lucy Allen Paton's Studies in the fairy mythology of Arthurian romance .

#2 I've seen that one on Amazon and the like, but haven't looked closely at it until now. I have to say, it looks promising.

I'm also going to look into the others listed here.

You may find The Lore of the Unicorn useful in places. I loved it.

Found myself an interesting one. The Unicorn's Garden has lots of folklore in it as well as stuff like medieval uses of herbs. All in a book about recreating the medieval garden.
