When I was in elementary school in the early/mid 90s, there was a book that my entire class was obsessed with. It had monsters and creatures from all around the world in it, with pretty watercolor-like illustrations and little stories/descriptions for each monster. I remember someone was always borrowing it from the school library. It was a larger book- bigger- maybe like 8.5 × 11... and skinny.

>2 grunkenn: I don't think that's the one. Thank you though. I think there was much less writing.

Even though you don't think it's Encyclopedia of Legendary Creatures, you might want to look at the recommendations on that work page. You might find it there!

I collected books about mythical creatures at one point, but unfortunately nothing that meets your description.

A couple more possibilities:
Fabulous Beasts by Alison Lurie/Monika Beisner
The Mythical Creatures Bible by Brenda Rosen

Maybe an old version of the Dungeons and Dragons Monster Manual? I think there was one by 1982, though my touchstone is for a 2014 edition.
