If I follow the touchstone I end up here: http://www.librarything.com/work/211660/summary
But I am unable to change the cover from the entry the touchstone leads to. Although my name is listed as having recently added the book, there doesn't seem to be any way to edit the book details.

You can't change the cover shown for the book in general, it shows the one most commonly used. Unfortunately, the grainy one is the only one used by 2 members who have the book. I tried 'recalculate cover' in under advanced options in the lower right corner of the work page, but it still retains the grainy one. Only when at least two members use another cover would it be possibly to change the default cover.
That said, the touchestone should lead you to your catalogued copy with its own cover (but when you just hover over the link it shows general info).
Possible workaround for default cover shown is to add two more copies of the work, chose the higher res cover for them, recalculate cover and when it changes the default, delete the surplus ones

It's got a purple hexagon rather than the fuzzy eye cover of yesterday. Try recalculating cover.

>8 2wonderY: I recalculated the cover. The catalogue link shows the purple hexagon, which is what I want. The touchstone link takes me to a main page which shows the cover with the ring and which I cannot edit, though that is not how touchstones work with other books, where I'm taken to the main page for my catalogue entry.

Yes, in my experience, all links, be it touchestones, search result links or something else, normally open your book page if you have it catalogued.
