Hello! I'm moving old reviews from my notes into LT. The newly entered reviews show the dates I created a review on this site. I can scroll through the last-read dates I've been adding in for my reference, so the reviews' dates don't matter on my side. Does it impact anything in the system that's worth considering?

No, not at all.
Reading dates are for your reference only; the site does nothing with that information. When you created a review is similarly unimportant. You can sort reviews by date (ascending and descending) on book pages, but that's the only time those are used for anything on the site.
Nothing prevents you from appending the original date to your reviews, though, should you want to preserve that information.
