Also own The Joy of Cooking, which I read ages ago. Full of good information for a cook on ingredients and why they behave the way they do.

I've yet to watch/read the Salt, Fat, Acid, Heat books/shows.

I have many cookbooks, but seem to really use just a few.All of Ina Garten`s, the Silver Palate, Saveur and Bon Appetit.

Ah sweet - that An Everlasting Meal is the cookbook I was looking for in another thread. With Chapter 1 on boiling lol.

Yep. I'd only read a few pages. It starts with the author's great love of boiled vegetables.
