CURRIED SHISH KABOBS
3/4 cup vegetable oil
2 tbsp. lemon juice
1 tbsp. honey
1/2 tsp. curry (I probably double this, but it would depend upon how much curry flavor you want!)
3 cloves garlic, minced
1/2 tsp. oregano
1/2 tsp. basil
Mix all of the above and then pour over:
1 1/2 lbs. steak or lamb, cut into 1 1/2" cubes
2 onions, quartered
1 green pepper, quartered
fresh mushrooms, whole
new potatoes (I use canned because they are easier to cook)
Yellow summer squash, sliced thick
Marinate overnight, stirring at least once.
Thread on skewers and cook on grill! Yum!
I usually double the recipe because I cook this for guests and I usually have enough left over for 1-2 lunches also--great on rice.
